White sturgeon are the largest freshwater fish in North America and can weigh over 1,500 pounds, be 20 feet in length, and live for over 100 years. The lineages are from the Sacramento Delta regions and from the Columbia river strains. The photo is a diagram of the anatomy of sturgeon.
There are a few species of Sturgeons in the West coast including, Green and White Sturgeons.
Sturgeon developmental stages
The sturgeon frys when hatched take live food and then must be converted to feed in a process that can take a toll on the number of survivals to juvenile stage. The diagram illustrates the developmental stages of sturgeons. Sturgeons are also heavy oxygen consumers, and rely heavily on good areation. When they reached a few inches is when the survival rate will increase. Depending upon availability, we sell small 3-6 inches in length sturgeon to the ornamental pet industry. Some are sold to other fish farmers, and the majority are kept to grow out stages at two years to the local live food markets, and at seven to eight years to the caviar trade.
Hatchling Sturgeon fry
Our sturgeon fry and fingerlings pricing are sold at both wholesale to qualified dealers and farms, and retail prices per inch to the pet industry and are sold under six inches. And two to three feet sturgeon are sold per lb to the live food markets. At the sizes shown in the photo, these are sold to other fish farms at a price per each (please inquire about current price).
4-6" fingerling Sturgeon
These are 4-6 inches fingerling sturgeons. At this stage, they are taking artificial feed very well and will be sorted out to lower density growing tanks. These are ready to grow in large mud ponds also, and is hard to passby for Koi pond hobbyists to not have a few swiming in their collection of jewels.

Broodstock Sturgeon in holding tank
The picture is an example of our large broodstock sturgeons. These can easily weigh a hundred pounds or more. We work closely with UC Davis in the preservation, continual education, and research with White sturgeon. We also participate with The Department of Fish and Game with preservation and stocking programs to help ensure these ancient fish doesn't disappear from wild sources.
